Wine Business Management for the Swiss Market The Wine Business Management for the Swiss Market program is designed for sommeliers, hospitality professionals, and beverage managers who want to understand the commercial realities behind successful wine and beverage programs. While many wine certifications focus on tasting and theory, this program addresses the business side of the beverage world — from wine list strategy and pricing models to inventory systems and multi-outlet beverage management. Structured as three interconnected courses, the program provides a comprehensive framework for building profitable beverage programs within the Swiss hospitality market. Participants may attend individual courses and receive a Certificate of Attendance, or complete all three modules to obtain the full professional designation of the Hospitality Wine Academy program. WINE BUSINESS MANAGEMENT FOR TH… The curriculum explores how wine programs function as a business engine within restaurants and hotels. Participants will learn how to analyze market structures, calculate true landed costs, design commercially effective wine lists, and build profitable by-the-glass programs. The program then expands to cover full beverage operations, including beer, cocktails, spirits, sake, and non-alcoholic beverages, as well as pricing strategies, upselling techniques, and inventory management. The final module focuses on leadership and strategic beverage management, using an immersive case study of a multi-outlet hotel operation. Participants work through real-world challenges such as supplier negotiations, centralized purchasing, event revenue strategy, and operational leadership, while developing a strategic beverage plan. Throughout the program, learning is highly practical and built around hands-on exercises, simulations, and applied business scenarios rather than traditional examinations. Participants develop actionable plans they can immediately apply within their own hospitality environments.
